I’m Christopher, and I’m the butcher and baker here at elements. You may have seen the links to my own blog in the last few posts here, and from now on you’ll be hearing even more from me as I will be taking over this site from here on out. I intend to post things relevant to the restaurant here, as well as linking to any particularly fun posts on my blog. Now, with the introduction out of the way, I have a couple of things to share including a post on my site that has me really excited.
Butchering with Dario Cecchini, from Bill Buford’s Heat
On the butcher, the baker I’ve posted a write-up of a butchery demo I attended with Dario Cecchini, who you’ll remember as the guy who quoted Dante if you’ve read Heat. It was a lot of fun and I got some fun photographs. That guy was a huge pleasure to learn from, and if he ever comes back through to demo any more beef butchery I’ll be first in line again.
