Curing of roe


The process of curing john dory roe. The roe sac’s are cured for 10 hours in a sake and salt mixture. After the 10 hour cure they are then put into a marinade of sake, Thai curry, lemongrass, scallion, and coriander. The roe and the marinade are then vacuum sealed for about 10 days. We will be using the cured roe as seasoning, like a finishing salt. We have made cured flounder roe previously, using only Japanese ingredients with excellent results. We are hoping to have great results using Thai flavors.
